As much arguing and controversy this election causes, none of it matters unless people vote. we might not all agree, but it shouldn't matter. make sure you vote on nov. 4 or vote early if your state allows. nothing is more important than making sure your voice is heard.
i'm voting because: i want my husband home quickly and safely, i want the education system fixed so no child is TRULY left behind, i don't like discrimination of any kind and that includes same sex couples, i want reform and most certainly change.

greatest invention....seriously

i'm not sure how we're managed to frame and hang pictures until this invention came along. now i don't actually own any of these frames yet but i'm going to purchase a bunch in various sizes so i can finally hang our wedding pictures. 5Second's new Slide & Store Frame ($17) takes the difficulty and distress out of hanging photographs.

slow down and taste the sweet life
i just spent the weekend in savannah, ga. i had travelled down south for my aunt's bridal shower and completely fell in the love with the historic city. of course everything about the trip was wonderful, but i'll save the details for another post. i'd like to dedicate this post to cupcakes.
of course :)
i have read about this bakery before and heard about it from paula deen. my aunt has been craving these cupcakes since the preganancy so we were able to make a trip there for a cupcake breakfast. back in the day bakery is a nonchalant bakery that sits on the corner of bull street and 40th just after you past forsyth park.
the cupcakes were moist and the buttercream was sweet and buttery-just the way it should be. the coffee was basic and delicious. i've decided that the south has better coffee because every where i went the coffee was perfect.
everyone was digging into the old fashioned cupcake; however, i'm a sucker for anything lemon and decided to taste the lemon coconut. while the lemon was nice and mild in the cupcake the old fashion won me over with it's sweet sprinkles and little flower decoration.
i encourage you to stop by the corner bakery whenever you find yourself in savannah, ga.

Cookies and Cream
my cupcake this week looked too delicious to pass up.
cookies & cream
They look amazing and feature crushed Oreo's in the cupcake as well as the icing. I fudged with the icing a little to make it taste more like cookies & cream ice cream and it turned out great. I was a little less satisfied with the cupcake itself. It's try and pretty bland. It wouldn't taste like much if it didn't have the crushed Oreo's through out. I think I'll back off on the cooking time next time. But they look great! They don't taste so bad.......
i've eaten 2 already :(

Cookies With 5 Ingredients...Seriously
I was searching the internet world for some quick cookies to make and stumbled upon these delicious peanut butter cookies made with 5 simple ingredients. I swear, just 5 and no flour! They turned out wonderfully and looked pretty as well.
Ingredients:
1 cup peanut butter
1/2 cup sugar
1 egg
melting chocolate
crushed peanuts
Directions:
1. combine peanut butter, sugar, and egg in a mixer and beat until smooth
2. refrigerate dough for 30 min.
3. preheat oven to 325
3. remove dough and roll into 18 balls (more if you want them smaller) placing them 2 inches apart on a cookie sheet
4. flatten each ball with a fork to make a criss cross pattern
6. cool for 5 min.
7. while cooling melt chocolate
8. dip one end of the cookie in the chocolate and cover with peanuts before it cools
9. let dry on a cooling rack and you are good to go!

Happy Birthday Sis
Last weekend I had plans to travel and seem my sister Nancy over her birthday. I had a flight out of Norfolk Friday evening. Things were complicated when Tropical Storm Hanna decided to make a visit to the Virginia Beach area. I ended up spending my entire night in airports as I was rerouted and switched to get to Buffalo. Eventually I made it to the great state of NY, but not until midnight.
I had the chance to see Nancy's lovely decorated apartment and have a fantastic meal at the Buffalo Chop House. Nancy also ordered a beautiful birthday cake from a little bakery near her school, The Dessert Deli. The bakery was definitely a dream for me. It was around breakfast when we picked up her cake and I purchased a lemon buttercream cupcake for breakfast....delicious!
Nancy had called me when she first designed her birthday cake with the bakery. She wouldn't tell me much about the cake just the flavor: two layers or white cake with a layer of chocolate cake with chocolate raspberry ganache and buttercream icing. I know, your mouth is watering. She said when we saw what the cake was our response would be, "AWWW, Nancy!" because it would be so her. Well, that's exactly my response. Here's the cake:
Of course! A Tiffany's box. It was perfect and delicious and the outside was buttercream, not fondant and it was so smooth!

Applesauce and Cinnamon Cupcakes
I just recently purchased a new cupcake book:
So I have more than enough recipes to last me while I'm baking to relieve stress. I had been baking a lot of thickly sweet cupcakes and decided that something a little more muffin like and fruity was in need. I selected a recipe for Applesauce and Cinnamon cupcakes. What a wonderful combination! Plus the recipe inludes walnuts and raisins...mmmmmm.They turned out better than expected. The first batch wasn't sweet in the slightest so I ended up making a second batch and adding just 1/4 c. of additional extra fine sugar. Those turned out the best!

saying good-bye to my sailor
i had to get up very early to take pat to the ship by 6am. he was heading out for his deployment today. after i dropped him off i came back home to get a couple more hours of sleep. his ship wasn't pulling out just yet. i then headed to the pier to check the ship out and say fairwell to my sweetheart before he left for 7 months. saying good-bye to him gets harder and harder each time. it's very dramatic watching all the sailors dressed to impress and manning the rails of such a large ship. it's breathtaking and altogether overwhelming. it gives you a strong sense of pride watching these brave individuals as they prepare to head off to who-knows-where and leave there loved ones behind.
i think i would have been angry if i had woken up this morning to a sunny day. luckily it was overcast and windy conditions which fit the feeling of the day. on the pier there was almost a chill in the air. it was so windy and every once in awhile it sprinkled down some rain. for some reason, that little bit of rain was comforting.
i was able to board the ship for a quick tour. i didn't see much, and to be honest, that was just fine with me. as soon as i stepped up the ramp to the quarter deck i felt funny. it wasn't just that it was a tremendously huge ship, it was partly because i felt like i didn't belong. it seemed awkward and strange with so many uniformed men running around preparing for their long journey. at one point pat had to leave me alone to run and change into his uniform. i wasn't allowed to be down where they sleep so i stayed in their mess hall. wow. i sat there, for what seemed like forever, waiting for him to come back in his dress whites and dixie cup hat. as dirty and raunchy as you think sailors and marines are, you are correct. i was the only woman in the room and felt like i had stepped into some frat house where everyone dressed the same. it's very cold on the ship: not what i expected. for some reason i had picture hundreds of men crowed on a hot sweaty ship shoveling coal into the engine room like on the Titanic. pat often talked about how cold he gets in his rack at night. so i suppose the air conditioning is a blessing. needless to say, i was happy to step off of the ship onto the warm pier; however, i had to leave pat on board and that was heartbreaking.
i sat on the pier for almost a half hour watching the men prepare. i contimplated leaving but decided to wait to see them man the rails. i'm glad i did. i heard them call for the sailors to go on deck and used my camera to scan the ledge looking for a glimpse of pat. to my surprise he showed up. he was right in front looking crisp in his white uniform. i was surprised that the excitement of seeing him brought tears to my eyes. i kept hoping that i was too far away for him to see me because i didn't want him to see me cry. he made a few hang guesstures telling me he loved me and that made me lose it. i can't explain to you the emotions that run through you watching your loved one like that. it's painfully unbearable.

Tiny Spaces
I am amazed at hour curious our kittens are. They can find the strangest toys, the most absurd trash to get into, and the tiny spaces to hide in. I was working and heard some commotion in the family room. It was loud enough that I was concerned something had fallen on one of the kittens. When I went into the family room to look I found the kittens as you see in this picture. Emmit had decided that tiny space where the DVD's were was perfect for him; however, he'd have to knock the DVD's out to fit inside. How adorable.

Cupcakes Rock!
Cupcakes
7 ounces white chocolate (make sure it's baking chocolate)
2 sticks butter
1 1/2 cups sugar
2 teaspoons vanilla
6 eggs
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup dried cranberries
1.Chop chocolate and transfer into the bowl of a standing mixer
2. Add butter to the chocolate and place the bowl over a pan of simmering water. Stir until chocolate melts and butter is combined.
3. Remove from heat and stire in sugar. Note that when you add the sugar the mixture will separate and look pretty funky. This is ok, the butter will rise to the top.
4. Let mixture cool for 10 minutes.
5. Add teh vanilla. Beat in an electric mixer for 3 minutes. Mixture will thicken and you should no longer see butter floating on top.
6. Add one egg at a time, mixing for 10 seconds between each.
7. Sift the flour, baking powder, and salt into the mixture. Return to the electric mixer and mix until blended.
8. Roughly chip the cranberries and coat with a thin layer of flour (this is important because of the thinness of the batter. The cranberries will fall to the bottom of each cake). Stir into the batter.
9. Scoop into cupcake cups 2/3s full and transfer to a 375 F oven.
10. Set your timer for 5 minutes. When the 5 minutes is up, turn down the oven to 350 F.
11. Set your timer for 10 minutes. When the 10 minutes is up rotate the pans.
12. Set your timer for 7 minutes more. Test the centers with a toothpick and remove the cupcakes once it comes out clean.
The Icing
8 ounces white chocolate, chopped
1 stick of unsalted butter, room temperature
1 package (8 ounces) Cream cheese
2 cups powdered sugar (possibly more)
1 teaspoon vanilla extract
1/4 teaspoon ground clove
1. In a heat proof bowl over a pan of simmering water, gently melt the white chocolate. Allow to cool for 2 minutes.
2. Using and electric mixer beat the butter and cream cheese until creamy.
3. Beat in the melted white chocolate.
3. Add 2 cups of powdered sugar, vanilla, and clove and beat at low speed scraping the sides and bottom of the bowl until light and fluffy. Add more powedered suger to arrive at the consistency and sweetness you like.
To assemble just top the cooled cupcakes with the frosting and decorate with dried cranberries.

Beauty Is Not Wrapper Deep
I found a fabulous website with beautiful cupcakes. I decided, after reading through a few recipe's that I was fully capable of baking a simple recipe for White Chocolate Cranberry Cupcakes. Doesn't that sound delicious?
Baking the cupcakes seemed simple. I followed the directions perfectly. The author of the blog using these quaint little Nut and Party cups as her cupcake wrapper. They make the cupcakes look so sweet; however, they are a little hard to eat out of. I had filled a few of the first cakes too much and there was some overflow, but most were looking scrumptious. They tasted delisious! I did run into a small problem. The cranberries seemed to fall to the bottom of the cupcakes. It's not bad, it made for a carmalized treat at the bottom of each cake. I think the next time I make these I'll coat the cranberries in flour and layer through the batter as opposed to folding them in as is.
So here's the catch: They look amazing and petite and delectable. Something about the batter isn't just right and they are very messy to eat. Now for the icing: The recipe had a list of ingredients that I purchased; however, when I went to mix it together some of the ingredients weren't in the directions! Most importantly, Philly Cream Cheese. I made my own version of cream cheese icing since the directions were lacking. I think the flavor takes away from the delcious morsels of cake.
I let them sit overnight in the refrigerator and they set up nicely. Out of the fridge they fall nicely in one piece out of the wrappers. I plan to take them to a small get together this evening and have my friends critique them. I will not give up.

Revival of Chocolate Chips
So I took the cookies to a friends house last night and they were a hit! I've actually had 2 today. I don't know if they just needed to marinate for a night or what. But they are delicious and perfect with a hint of salt. MMMMMmmmmmmm. They taste like you bought them in a deli or a bakery and that's what I was going for. I'm extremely stoked that I've found the perfect recipe :)
When Cupcake's Go Bad
I made little mini cupcakes because I think they are cute. I didn't watch closely and they are little dry because they cooked too long. I got impatient and made mini cakes that are almost perfect but didn't cook long enough.

Can't I perfect Chocolate Chip Cookies?
With that said, I have been trying to perfect the chocolate chip cookie. After last night I think I'm amazingly close. I found a recipe on a blog I like and she claimed that she had made the best chocolate chip cookie. I think that's hard to do because everyone likes their cookie differently. I love a crispy yet chewy cookie with equal parts sweet and salty. I make the same mistake every time I bake: I don't look in the cupboard before I go buy ingredients. I just assume what I think I have and what I don't. I'm always wrong. This time I thought I had enough light brown sugar. Of course I didn't so I had to substitute with dark brown sugar because I was halfway through the process by then. Although dark brown sugar is good in some instances. In this one it made the cookie a little to salty for my taste.
In my experience if the batter comes out tasting absolutely delicious the cookies aren't good. I don't know why, but I'll LOVE the taste of the batter and then the cookies will flop. Well I tasted one fresh out of the oven and was disappointed. The cookie was too salty and hardly sweet enough. Although they look beautiful, they just weren't the taste I was going for. I haven't given up. I will make them with the correct ingredients because I'm SO close.
P.S. I did taste the cookies this morning and to my surprise they tasted delicious! I think a room temperature cookie is the way to go. The flavors are set and the crisp and chew are there. I'm pleasantly surprised by this discovery :)
I have included the recipe that was found in The New York Times, from Dave Leite and Jacques Torres.
Chocolate Chip Cookies
2 c. minus 2 tbsp. cake flour
1 2/3 c. bread flour
1 1/4 tsp. baking soda
1 1/2 tsp. baking powder
1 1/2 tsp. coarse salt, such as kosher
2 1/2 sticks unsalted butter, softened
1 1/4 c. light brown sugar
1 c. plus 2 tbsp. granulated sugar
2 large eggs
2 tsp. vanilla extract
1 1/4 pounds bitterseet chocolate chips (60% cacao content like Ghirardelli)
Combine flours, baking soda, baking powder, and salt in a bowl. Whisk well; then set aside.
Using a mixer ftted with a paddle attachment, cream butter and sugars until very light and fluffy, about 3-5 minutes. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla. Scrape down the sides of the bowl with a rubber spatula as needed. Reduce the mixer speed to low; then add dry ingredients, and mix until just combined. (this part can be very messy. If you have a plastic guard use it!)
When ready, preheat oven to 350 F. Remove the bowl and allow to soften. Line a baking sheet with parchment paper or a nonstick baking mat.
Using a standard size ice cream scoop (although I just used my hands!) scoop mounds of cookie dough onto the baking sheet, making sure the space them evenly. Bake for 15-20 min. until goldent brown. Transfer the baking sheet to a wire rack for 10 min. then transfer the cookies onto the rack to cool a bit more.
yield: About 24 (5 inch) cookies

Farewell Diego Garcia! I'm glad that Pat is not stuck on a deserted island anymore. I ran across some old e-mails between Pat and I from right before he left the island. He did some adventuring and took some pretty cool pictures on the island. It looks like he was on the LOST island and I love it! If it weren't so horrible to be so alone this island would be a beautiful place to visit. Too bad it's military only. I'd love to vacation there for a week.

MobileMe
So I'm still waiting on my new iPhone (I'm extremely impatient), but I started the mobileME application on my computer. I can get a free trial for 60 days so I'm playing with it until my iPhone arrives. The application is quick and efficient. I'm able to sync all my basic applications and publish information into an online database that people can view. I now have some new information for you all the check out.
